TRADITIONAL RAWA PUTTU

Puttu is a South-Indian breakfast dish. A wholesome meal, that is filling and very nutritious. Puttu is a steamed rice/semolina(Rawa) dish that is made with a sweet or savory coconut filling.

Traditionally, Puttus are made in Bamboo logs to infuse it with a lovely natural aroma. The native dish from Kerala is nowadays made in cylindrical steel containers which is the “Puttu Maker”.

INGREDIENTS TO MAKE RAWA PUTTU:

  • 1 cup Kasturi Rawa
  • 1/3 cup fresh grated coconut
  • Salt
  • Water

RECIPE TO MAKE RAWA PUTTU:

  • Dry roast the Kasturi Rawa till you can smell a lingering aroma of the rawa. Allow this to cool completely.
  • Add salt as per your taste to the roasted rawa.
  • Add water in small batches and add only as much to allow you to make a ball out of it/ mould it into a specific shape.
  • Mount a pressure cooker/ steamer with water and bring it to a boil to prepare it for steaming.
  • Meanwhile, make the preparation for the Puttu. In the Puttu-Maker, alternativey add layers of the Rawa mixture and grated coconut. Finish off this procedure by topping it with a layer of grated coconut
  • Place the Puttu Maker in the steamer/ cooker and steam(without whistle) the puttu for 10-15 minutes.

The traditional Puttu is served steaming hot, along with a side dish such as Sugar, Banana or a chickpeas curry.
