STRING HOPPERS – SHEVAI

String hoppers are a delicacy from the southern states of India. Called with a variety of names such as Shavige, Shevai, Shemai or Idiyappam, String Hoppers are made using a variety of ingredients like Semolina, Rice or Rice Flour.

Let’s look at one way of making the Traditional Shevai.

RECIPE CARD FOR SHEVAI:

INGREDIENTS:

  • Kasturi Bombay Rava: 4 Cups
  • Water: 3 Cups
  • Salt

METHOD:

PREPARATION OF DOUGH:

  • Add salt as per taste to water and give it a boil.
  • Add Kasturi Bombay Rava to it.
  • Cook till you get a nice cooked dough which comes off the floor of the pan.
  • Once the dough cools a little, make balls out of the dough.
  • Steam these dough balls in a steamer until they cook well.

PREPARATION OF SHEVAI:

  • Put the dough ball in the Shevai maker and press it in, to get strings of Shevai from the other perforated end of the Shevai maker.
  • Shevai can be enjoyed with a nice Vegetable Kurma for breakfast, a Konkani style Dalithoy or Colmbo for lunch, mixed with grated jaggery and grated coconut for a light evening snack and with a spicy green chillie sauce for a good dinner.
